I'm going to be 'backtesting' these rib chops that I ate, later today dmn they were good. . .

At $29.99/lb, and mostly fat and bone, I think I'm going to stick with the loin chops ($10.99/lb).

I salt the meat and leave it in the open air in the fridge, turning it over once per day. . .

it's hard to convince people that not only can you still eat the steak when it has a slight smell, but it is more delicious;

they think that it is going to kill them maybe a Walmart steak. . .

Tastes good but its one of those things of which you dont want to know what you are actually eating
